Wheat Bran Muffins (almost no flour) – Nutritious Day Starter Recipe from bakeyourwaykitchen!

This low fat muffin is a great breakfast starter with many delicious flavors.

INGREDIENTS:

Wet:
1/2 Maple Syrup
1/2 Cup Yogurt
1/4 Cup of a Flavourless Oil
1 Egg

Dry:
2 Tablespoons of Flour
1 Tablespoon of Orange Zest
1 Teaspoon of Cinnamon
1 1/2 Cups of Wheat Bran
2 Teaspoons of Baking Powder

1 large apple, cut into cubes.

METHOD:

1. Preheat oven to 400F/200C and prepare a muffin tin.
2. Place all wet ingredients in one bowl, mix together. Place all dry ingredients in another bowl, whisk together.
3. Add dry to wet ingredients and mix just till combined.
4. Fold in sliced apples. (cut into cubes)
5. Transfer to 12 prepared muffin tins.
6. Place in oven till muffins develop slight colour and a toothpick in the centre comes out clean (about 10 minutes). Let cool for at least 10 minutes after removed from oven.

Store these in an air tight container at room temperature or in the fridge.
